    Abstract: 近幾十年服務業比率竄升,餐飲更應加入服務在內,相較於一般供應鏈將會更難評估其效益,因此,若能整合此供應鏈並研究其績效評估,相信有助於餐飲事業的發展。而後進一步規劃區域餐飲供應鏈的結合,響應綠化、減少二氧化碳排量、盡企業社會責任。本文將整合餐飲供應鏈,經由探討餐飲事業上游至顧客端的工作流程,構建整合餐飲供應鏈之績效評估模式。本文應用多準則評估方法進行,利用AHP層級分析法,找出指標的權重加以排名,為能確切辨識不同專家之語意程度,本文在多準則評估方法中,加入FUZZY模糊理論,期望能夠建構最適合於餐飲供應鏈的
