    Abstract: 隨著飲食型態改變與多樣性,餐飲業的競爭也日益激烈,加上消費者消費意識提高,生活水準提升,消費者的要求不再只是吃得飽,甚至要能達到感官上的滿足,因此以美學為訴求的餐廳已成為餐飲業中的一股新潮流。本研究將藉由個案研究方法及競爭優勢矩陣,分析食養山房之經營競爭優勢。本次研究之結果顯示美學經營之餐廳多屬能力競爭優勢,而競爭優勢的創造及維持來自資源具有獨特、專屬及模糊等三大特性:1.獨特性2.專屬性3.模糊性。因此,經營美學餐廳不需像一般餐廳要有專業之餐飲設備、行銷手法及完善之員工訓練制度等,而是應注意所提供之產品
