    Abstract: 由於現今環保意識抬頭,綠色觀念是必然的趨勢。隨著經濟的發展及時代潮流的進步,一般民眾的飲食習慣走向多元化,也造就了目前多元的餐飲業生態。目前我國政府也持續推動綠色消費,鼓勵民眾在具有環保概念的餐廳用餐。近年來企業綠色管理的永續發展概念已成為世界各國企業所關注的議題,業者及消費者應朝此方向落實。
    本研究主要目的為:1.歸納整理國內餐飲業之綠色服務設計現況。2.分別從服務設計者與消費者觀點,分析綠色餐廳服務設計的準則因素,並以品質機能展開(Quality Function Deployment, QFD)建構
